Production steps
- Portion and press patties day-of or the night before; keep cold.
- Griddle patties in batches; cheese in the last minute to melt.
- Crisp bacon on sheet pans in the oven (400°F, ~18 min).
- Hold cooked burgers in foil pans in a warmer/chafer.
- Set up topping bar: lettuce, tomato, onion, pickles, condiments.
